This main dish garden salad is as delicious as it is lovely. And healthy, to boot! The dressing uses our Green Apple Balsamic for an interesting twist to a creamy dressing. The customizable possibilities for the crowd pleasing salad are endless!

Romaine lettuce, chopped into bite-sized pieces | |
Bell pepper, chopped | |
Celery, chopped | |
Carrot, chopped | |
Red onion, small dice | |
Grape Tomatoes, halved | |
Boiled egg, chopped | |
Garbanzo Beans, rinsed | |
Sliced black olives | |
Feta Cheese | |
2 Tbl Green Apple Balsamic | |
2 tsp dijon mustard | |
2 tsp It's Greek to Me Blend | |
¼ cup + 2 Tbl plain Greek yogurt | |
1 Tbl mayo | |
1 tsp honey | |
¼ cup Arbequina Extra Virgin Olive Oil | |
salt and freshly ground pepper to taste |
1. | For the salad, arrange the first 10 main ingredients on a platter. |
2. | For the dressing, whisk together the next six dressing ingredients in a bowl. Allow to sit for 10 minutes to soften the herbs. Whisk in the Arbequina Extra Virgin Olive Oil. Taste and adjust with salt and pepper. |
