Ingredients

5-6 yellow squash, quartered lengthwise
5-6 zucchini squash, quartered lengthwise
1/2 pound fresh green beans (or a bunch of asparagus)
1 sweet yellow onion, thinly sliced
4-5 slices of prosciutto
1/2 parmesan cheese, shredded or grated
Tuscan Herb Avocado Oil
Aluminum foil cut into 12

Foil packet cooking is a easy way to get a healthy meal to the table–they’re fast and require very little cleanup. This version uses lots of fresh summer veggies plus our Tuscan Herb Avocado Oil. The prosciutto can be omitted for a vegetarian version. These can go in the oven or on the grill.

Instructions

1.Heat oven or grill to 400-425°F.
2.Cut each slice of prosciutto into 2-3 pieces, lengthwise. On a piece of foil, place 1 quartered yellow squash, 1 quartered of zucchini squash and 2 green beans and sprinkle with parmesan cheese. Wrap in a piece of prosciutto. Add some onion slices and drizzle with Tuscan Herb Avocado Oil.
3.Fold the foil so that it makes a packet, with the corners and edges sealed. Bake or grill for 10-15 minutes, depending upon how crisp you like your prosciutto. Unfold the packets and enjoy!
