Our Coffee BBQ Rub is a favorite among our customers. During tailgate season, it’s hard to keep in stock. Don’t be surprised to smell coffee on the grill if you’re walking through Death Valley at LSU during football season. This recipe spices up pork tendeloin with the unique sweet-spicy-pungeant flavor combo that only our Coffee BBQ rub can deliver. This one is a keeper!
1 (2-pound) pork tenderloin, trimmed of excess fat | |
3 Tbl of Coffee BBQ Rub | |
3 Tbl of Arbequina Extra Virgin Olive Oil |
1. | Preheat oven or grill to 375°F. |
2. | In a baking dish, add 2 Tbl olive oil and 2 Tbl Coffee BBQ rub. Pierce pork a few times with a knife. Place in baking dish and thoroughly coat all sides, rubbing in thoroughly. |
3. | In a small bowl, mix the remaining 1 tablespoon olive oil and 1 tablespoon Coffee BBQ Rub. Spread the mixture evenly on the bottom of the baking dish. This mixture will create a dipping sauce once the meat drippings incorporate with it during baking. |
4. | Bake 40-45minutes or until meat thermometer inserted into the thickest portion of the tenderloin registers 160° F. |
