Blackberry Bramble is fun to say all on its own. Want more fun? Add in Butterfly Pea Flower! This fun libation is all about summertime sweetness and a beautiful bouquet of color. Sweet berries meet gin and the sapphire tea reduction for a sip that’s a looker and delish all at once.

Ingredients

  • 1 Tbl Butterfly Pea Flower

  • 1 cup sugar

  • 16 blackberries

  • 2 tsp sugar

  • 8 oz gin

  • 2 oz orange juice

  • 4 oz lemon juice

  • Lemon wheels for garnish

Instructions

  • First, make the sweetened Butterfly Pea Flower tea. Pour 2 cups boiling water over the flowers. Steep for 10 mins. Strain off the flowers and discard. Return the steeped liquid to the heat and add in 1 cup sugar. Simmer for 3-5 mins or until the sugar is dissolved and the mixture is reduced a bit. Chill.
  • Place 4 blackberries in the bottom of pilsner or julep glasses. Add in 1/2 tsp sugar to each glass. Muddle to break up the berries. Add crushed ice to fill the glasses halfway.
  • In an ice-filled shaker, add in 8 oz gin, 2 oz orange juice, 4 oz lemon juice. Shake. (Our Teaching Kitchen Chef Matthew says, “Shake it until your hand hurts from the cold.”)
  • Pour the chilled, sweetened Butterfly Pea Flower tea to fill the glasses halfway. Strain in the shaken gin mixture to top the Butterfly Pea Flower tea in each glass. Garnish with a lemon wheel.
