Homemade crumpets are easy and rewarding! The simple yeasted batter rises for an hour and leads to those signature bubbles. As you griddle them, you can see those tiny holes – ready and waiting for butter, jam or honey. A quick flip toasts, and you’re ready for warm, chewy crumpets that are perfect for breakfast or tea time. We love them with our Quick Blueberry Ginger Sauce and Spiced Honey Butter. Fun, delicious and worth the wait!

  • Place the flours, yeast, granulated sugar, Baker’s Salt and baking soda in a large bowl and whisk to combine.
  • Heat the milk and 3/4 cup water in a microwave safe bowl in the microwave until 110ºF. Take care to not overheat the milk/water mixture as it can kill the yeast.
  • Make a well in the center of the flour and pour in the warmed milk/water. Whisk, starting from the edge of the well, until a batter has just formed. Add the apple cider vinegar and 2 tablespoons water. Whisk to combine.
  • Wet a clean dishcloth with hot water and wring out. Cover the bowl with the towel and move to a warm spot for about 1 hour. The mixture should have doubled in size and have a bubbly surface.
  • Give the batter a quick stir with a large spoon. Lightly grease a griddle or large nonstick skillet, then wipe off any excess with a paper towel and heat to medium. Grease English muffin, pancake rings, biscuit cutters or all-purpose baking rings – metal rings that are about 3.5 inches in diameter work well. Place the 3 or 4 rings on the griddle to heat for about 1 minute.
  • Pour 1/2 cup batter into each ring. Reduce the heat to medium-low and let cook slowly until bubbles form and pop around the edge to create small holes. After 6 to 7 minutes, the center bubbles should pop and the crumpets will pull away easily from the sides of the rings – note that the surface will still be a little tacky. Using tongs, remove the rings. Using a spatula, flip the crumpets and until lightly golden in spots, about 1 minute more.
  • Transfer to a cooling rack. Repeat the process, greasing the rings before each batch, until you use up the batter. Serve with Quick Blueberry Ginger Sauce and Spiced Honey Butter.
