Hot crawfish dip is a creamy, spicy appetizer perfect as a crawfish boil side, dinner party starter or cocktail hour snack. This delicious dip comes together in a snap and features a medley of flavors including our Meaux Betta Blend. Baked until bubbly, serve this one warm with crusty bread or crackers.

Ingredients

  • 1 stick butter

  • 1 bunch scallions, sliced

  • 1/2 green, red or yellow bell pepper, diced

  • 1 lb crawfish tails

  • 2 cloves garlic, minced

  • 1 4oz jar diced pimientos, drained

  • 1 Tbl Meaux Betta Blend

  • 1 tsp salt

  • Juice of 1/2 lemon

  • 8 oz cream cheese (or 4oz goat cheese and 4 oz cream cheese)

  • Chopped fresh parsley, for serving

Instructions

  • In a pot over medium heat, melt the butter and add scallions and bell pepper. Cook, stirring occasionally, 8 minutes or until bell pepper is tender. Take care to not brown the scallion and bell pepper.
  • Add in the crawfish, garlic, pimiento, Meaux Betta Blend, garlic and lemon juice. Stir to combine and heat through. Turn off the heat and add in the cream cheese. Stir until the cream cheese is incorporated.
  • Garnish with chopped fresh parsley and serve with baguette or crackers.
