Ingredients
1 fennel bulb, trimmed and sliced thin
1 shallot, halved and sliced thin
1 small orange, sliced thin
2 lb skinless salmon filet
3/4 cup Chipotle Extra Virgin Olive Oil
Instructions
- Preheat oven to 275°F. Place the fennel, shallot and orange slices in a shallow skillet or baking dish – about 3 quarts. The salmon should fit compactly in the dish so that the oil comes up and around the fish. Season the salmon on both sides with Seattle Salmon Blend. Place on top of the aromatics in the skillet. Pour in the oil.
- Roast for 30-40 minutes, basting the fish with oil occasionally, until the salmon is rare. An instant-read thermometer should register 125°F. Serve warm, room temp or cold.
