Chicken Sauce Piquant is a bold, spicy Louisiana staple from Cajun country that lives up to its name—piquant means “sting!” We capture the big, bold flavor with our Gator Bite Seasoning Blend.   • Season the chicken thighs on both sides with Gator Bite Seasoning Blend. If time allows, do this early in the day and hold in the fridge. When ready to cook, remove the chicken from the fridge 30 mins prior to cooking.
  • Heat a Dutch oven over medium high heat. Drizzle in Shallot Extra Virgin Olive Oil to coat the bottom of the pan. Working in batches, sear the chicken thighs until golden brown on both sides. Move to a plate.
  • Add the onion, bell pepper and celery to the rendered chicken fat in the pot. Cook until the vegetables are very tender – about 8 minutes. Add in the garlic, tomato paste and canned tomatoes and cook for about 4 minutes. Add in the jarred roux and stir to combine. Heat through then add in the sugar, salt, stock, Gator Bite Seasoning Blend and Worcestershire sauce. Bring to a boil then reduce to a simmer.
  • Cook for 15 minutes then add in the chicken and cook until the chicken is cooked through and registers 165°F with an instant read thermometer. Serve over steamed rice and garnish with sliced scallions and parsley.
