SWEET POTATO & BLACK BEAN BURGER

hourSmoky and little bit sweet plus a gluten-free, protein-packed slam dunk – this West African-inspired veggie burger is an all-around winner. These patties can be oven roasted or skillet sizzled. They make a big batch and freeze well. Smoked Paprika adds a sweet-smoky note while Grains of Paradise deliver the heat. We’ve dunked these burgers in Jay D’s Barbecue Sauce. Dolloped them with Kewpie Mayo. Even dotted them with sweet heat from Grinning Jupiter’s Pepper Jelly. No matter how you dress these burgers, they are so, so good!
Ingredients
2 cups mashed sweet potatoes – about 2 large sweet potatoes
Salt
1 can black beans, drained & rinsed
1/4 cup Soom Tahini
1/4 cup cooked rice
1/2 small red onion, finely chopped
2 tsp Smoked Sweet Paprika
1 tsp ground Grains of Paradise
1 tsp salt
1/2 cup Pecan Meal
spinach, tomato, onion and avocado for serving

Instructions
- First, roast the sweet potatoes. Preheat oven to 400°. Peel the sweet potatoes and cut into 2-inch thick slices. Place on a sheet pan and drizzle with Chipotle Extra Virgin Olive Oil and season with salt. Roast for 15 minutes. Remove from oven and flip the sweet potato slices. Roast for an additional 10-15 minutes or until the sweet potatoes can be easily pierced with a knife. Move to a large bowl.
- To the bowl with the sweet potatoes, add in half of the black beans and mash along with the sweet potatoes. Stir in the tahini, cooked rice, red onion, ground Grains of Paradise, Smoked Sweet Paprika, 1 tsp salt and Pecan Meal. Fold in the reserved un-mashed black beans.
- Form the mixture into 1/2 cup patties. To freeze the patties at this point, separate the patties on a sheet pan and place in the freezer. Once frozen, move them to a zip top bag.
- To bake the patties, line a sheet pan with foil and drizzle the foil with Chipotle Extra Virgin Olive Oil Bake the patties in a 375°F oven for 15 mins, then turn and bake for an additional 15 minutes. The patties will be fragile, so turn with care.
- To cook the patties stovetop, heat a nonstick skillet over medium high heat. Drizzle in Chipotle Extra Virgin Olive Oil and sear the patties on one side until golden brown – about 10 mins. Turn and lower the heat and continue cooking for another 12-15 minutes or until the patties are firm.
