1 Yellow Squash, cut into 1/2-inch slices
1 Zucchini, cut into 1-inch slices
1 bell pepper, cored, quartered and cut into 1-inch pieces
1 red onion, quartered and sliced
1 pint button mushrooms, halved
Arbequina Olive Oil
2 Tbl Apple Chipotle Rub
1 tsp salt

We sell tons of Apple Chipotle Rub for chicken, ribs and pork shoulder. But this is the little blend that could! It’s such a multitasker. Baked beans, meatloaf, turkey burgers and these veggie skewers. Get ready for a sweet-smoky kick!


1.If using wooden skewers, soak the skewers in water for at least 30 minutes before placing on the grill.
2.Preheat grill to medium high - 375°F.
3.In a bowl, toss the vegetables with Arbequina Extra Virgin Olive Oil, Apple Chipotle Rub and salt. Using your hands, turn to coat all sides. Skewer the vegetables, alternating pieces of onions with the other veggies.
4.Grill for 12-15 minutes, turning often. The cherry tomatoes should blister, the mushrooms should soften and the other veggies should char on the edges. If the edges are getting too brown before the vegetables cook and soften, move to a cooler section of the grill to allow the veggies to cook. Then move back to a higher heat section to get nice grill marks.
