Ingredients

2 inch pieces of assorted veggies: Yellow Squash, Zucchini, Red Onion, Cherry Tomatoes, Mushrooms and Bell Pepper are good choices
Arbequina Olive Oil
Apple Chipotle Rub

We sell tons of Apple Chipotle Rub for chicken, ribs and pork shoulder. But this is the little blend that could! It’s such a multitasker. Baked beans, meatloaf, turkey burgers and these veggie skewers. Get ready for a sweet-smoky kick!

Instructions

1.If using wooden skewers, soak the skewers in water for at least 30 minutes before placing on the grill.
2.Preheat grill to medium high - 375°F.
3.In a bowl, toss the vegetables with Arbequina Extra Virgin Olive Oil and Apple Chipotle Rub. Using your hands, turn to coat all sides. Skewer the vegetables, alternating pieces of onions with the other veggies.
4.Grill for 6-10 minutes or until the veggies are softened and beginning to char on the edges.
