Born at Brennan’s Restaurant, Bananas Foster is a New Orleans tradition. Our version brings in Vietnamese Cinnamon and a few scrapes of whole Nutmeg. We stud the sauce with a little Fleur de Sel to help build some contrast in this sweet dessert. Serve this sublime sensation with a big scoop of ice cream. This crowd pleaser comes together quickly and is definitely dressed to impress.

Ingredients

  • 1 stick unsalted butter

  • 1/4 cup packed brown sugar

  • 6 bananas peeled and quartered

  • 1 tsp orange zest

  • Juice of 1 orange

  • 1 tsp Vietnamese Cinnamon

  • Several scrapes Whole Nutmeg

  • 1/4 cup dark rum

  • 3 Tbsp banana liqueur

  • 1/4 tsp Fleur de Sel

  • Vanilla ice cream, for serving

Instructions

  • Heat butter and brown sugar in a large skillet over medium- high heat, stirring constantly, until they have melted and thickened – about 5 minutes. Add the bananas, orange zest, orange juice, cinnamon and nutmeg. Cook for 3 more minutes, stirring gently to coat the bananas.
  • Remove the pan from the heat and, holding the skillet away from you, carefully add the rum and liqueur. Return the skillet to the heat and cook for another 3 minutes. Be aware that the alcohol may ignite if your cooking over an open flame. You can also use a lighter to burn off the alcohol. Serve with ice cream.
