Ingredients
To make the Big-batch Pancake Mix:
4 cups whole wheat flour
1 cup all-purpose flour
3 ½ cups old-fashioned oats, ground to a flour in a food processor
3 Tbl sugar
3 Tbl baking powder
1 Tbl Fleur de Sel
1 cup All Natural Avocado Oil
To make a batch of pancakes:
1 cup buttermilk
1 egg
Maple syrup for serving
Instructions
- First, make the Big Batch Pancake Mix: Combine the flours, ground oats, baking powder, sugar and Fleur de Sel in the bowl of a stand mixer with the paddle attachment.
- Heat a lightly-greased griddle to medium-high. Drop batter using a ¼ cup measure. Griddle until bubbles burst on top, then flip. Repeat with remaining batter.
- When you’re ready to make a batch of pancakes, dip into your Big-batch Pancake Mix – combine 1 cup mix, 1 cup buttermilk and 1 egg.
