Creamy avocado, tart lime and herby cilantro. What could be better? This salad, that’s what! We love this combo of tomatoes, bell pepper and black beans – one of our favorite pantry staples! We added in our Cilantro Lime Pepper, and the result is one amazing salad. Eat it as a main dish. Tuck it in as a side. Load it into tortillas at lunchtime. It’s all so good!
1 pint grape tomatoes | |
1 yellow bell pepper, seeded and diced | |
15-oz can black beans, drained and rinsed | |
1/2 cup red onion, diced | |
2 Tbl minced fresh jalapeno | |
1/2 tsp freshly grated lime zest | |
Juice of 2 limes | |
1 garlic clove, minced | |
1 tsp Cilantro Lime Pepper | |
1/4 tsp cayenne | |
1/4 cup Lemon Basil Extra Virgin Olive Oil | |
2 ripe avocados, diced |
1. | Place the tomatoes, yellow pepper, black beans, red onion, jalapeno peppers and lime zest in a large bowl. |
2. | Whisk together the lime juice, olive oil, Cilantro Lime Pepper, garlic and cayenne pepper and pour over the vegetables. Toss well. |
3. | Just before serving, fold the avocados into the salad. Taste and adjust with salt. This salad is best served at room temp! |
