minutesEggroll in a bowl is a deconstructed version of the classic eggroll, sans the wrapper. We saute ground pork with our spicy Thai Spice along with ginger, garlic and scallions. Pop in a bag of pre-shredded cabbage and crunch from Toasted Sesame Seeds. Don’t forget the drizzle of Ginger Garlic Sesame Oil – yum! Everything you love about an eggroll in a low-carb format. Grab a fork!
Ingredients
1 lb ground pork
1 tsp salt
2 tsp Thai Spice
1 shallot, finely minced
1 cup grated carrot
4 cloves garlic, minced
1 Tbl grated fresh ginger
1 tsp sugar
14 oz bag cole slaw mix
Toasted Sesame Seeds for garnish
Slivered scallions, for garnish
Instructions
- Season the ground pork with Thai Spice and salt. If time allows, do this early in the day and refrigerate until ready to use.
- Heat a wok or wide skillet over medium heat and drizzle in the avocado oil until shimmering. Add in the ground pork and shallot and saute until the meat is fully cooked through – about 8 minutes.
- Make a well in the center and drizzle in a little additional oil. Add in the carrot, garlic, ginger and sugar. Saute until the carrot softens a little – about 2 minutes. Incorporate the carrot into the ground pork and stir.
- Add in the cabbage and drizzle with 2 tsp Ginger Garlic Toasted Sesame Oil. Saute for about 4 minutes or until the cabbage is tender crisp.
- Serve topped with sesame seeds and sliced scallion.
