  • Over medium heat, coat the bottom of a sauce pan with olive oil.
  • Add onion and sauté for 5 minutes. Then, add garlic and sauté for an additional 5 minutes.
  • Add all remaining ingredients. Bring to a simmer and cook for 5 minutes.
  • Remove mixture from the heat and puree with immersion blender or carefully transfer to a blender, taking care to vent the top.
  • Let cool and store in the fridge.
