minutesWe teach this recipe in our annual Oktoberfest Cooking Class. It comes around once a year, so be sure to keep an eye on the Cooking Class Calendar to snag a spot. Spaetzle is about as comforting as it gets. Delicious with a helping of Braised Sweet Cabbage!
Ingredients
2 1/4 cups all-purpose flour
1 tsp salt
A few scrapes Nutmeg
2 large eggs
½-1 cup water
4 Tbl butter
2 Tbl Farmstand Veggie Blend
Instructions
- Mix flour, salt and nutmeg in a bowl. Add eggs and mix well.
- Gradually add just enough water to make a smooth, light, and firm dough. The amount will depend on how ‘dry’ your flour is.
- Let stand for 10 minutes. Meanwhile bring a large pot of salted water to boil.
- Push dough through the Spatzle maker, directly into the boiling water. Noodles will float when they are done (will take a few minutes). Remove with spider or slotted spoon.
- Heat a non stick skillet with 4 Tbl butter and 2 Tbl Farmstand Veggie Blend. Saute til bottoms are golden brown, stirring often, about 7-10 min.
