Ingredients

2 large sweet potatoes, scrubbed clean
1/2 onion, sliced
3 Tbl Smoked Extra Virgin Olive Oil
1 tsp Smoked Sweet Paprika
1 tsp salt
1 Tbl dark brown sugar

We have yet to meet a sweet potato recipe that we didn’t like. But this one? We are head over heels. Smokiness is obviously meant to be in a relationship with sweet potatoes. Pop open your Smoked Extra Virgin Olive Oil and make this one!

Instructions

1.Preheat oven to 400°F. Set a cast iron skillet in the oven for 10 minutes.
2.Peel and cube the sweet potatoes. Place them in a bowl and add in the sliced onions, Smoked Extra Virgin Olive Oil, Smoked Sweet Paprika and salt. Combine.
3.Remove the skillet from the oven and scrape the contents of the bowl into the skillet. You should get a sizzle. Return to the oven and roast for 15-20 minutes or until tender.
4.Remove the skillet from the oven and add the brown sugar. Stir and return to the oven for 5 minutes.
5.Drizzle with a little additional Smoked Extra Virgin Olive Oil before serving.
