Sure, grabbing a jar of chutney at the market is easy. But making your own chutney is pretty deliciously simple. Frozen apricots combine with aromatic red onion, a bit of fresh ginger and our Tikka Masala Blend. The result is a condiment that is lamb chop, grilled shrimp and cheese board ready. Dipple, spreadable and totally delectable. Easy Peasey! Oh, and this chutney is super delicious with our British Sausage Rolls.
12 oz package dried apricots | |
1 red onion, chopped | |
1 inch piece fresh ginger, chopped | |
1 Tbl golden raisins | |
1/4 cup cashews, chopped | |
1/4 cup packed brown sugar | |
2 tsp Tikka Masala Blend | |
1 cinnamon stick | |
1/2 tsp Kashmiri Chile Powder | |
1/2 tsp salt | |
1 Tbl Apple Cider Vinegar |
1. | Place the dried apricots and chopped ginger in a pot and cover with 3 cups water. Simmer on low for 40 mins or until the apricots are soft and mashable. |
2. | When softened, mash with a potato masher, ladle or cocktail muddler. Add in the raisins, cashews, brown sugar, Tikka Masala Blend, Kashmiri Chile Powder, Cinnamon Stick, vinegar and salt. Simmer for 10 mins. The mixture should be thickened, spoonable and glossy Taste and adjust with salt and vinegar for tanginess to offset the sweetness. |
3. | Cool and serve. Store in a jar in the fridge for up to 3 weeks. |
