Smoky roasted sweet potatoes

minutesWe have yet to meet a sweet potato recipe that we didn’t like. But this one? We are head over heels. Smokiness is obviously meant to be in a relationship with sweet potatoes. Pop open your Smoked Extra Virgin Olive Oil and make this one!
Ingredients
2 large sweet potatoes, scrubbed clean
1/2 onion, sliced
1 tsp Smoked Sweet Paprika
1 tsp salt
1 Tbl dark brown sugar
Instructions
- Preheat oven to 400°F. Set a cast iron skillet in the oven for 10 minutes.
- Peel and cube the sweet potatoes. Place them in a bowl and add in the sliced onions, Smoked Extra Virgin Olive Oil, Smoked Sweet Paprika and salt. Combine.
- Remove the skillet from the oven and scrape the contents of the bowl into the skillet. You should get a sizzle. Return to the oven and roast for 15-20 minutes or until tender.
- Remove the skillet from the oven and add the brown sugar. Stir and return to the oven for 5 minutes.
- Drizzle with a little additional Smoked Extra Virgin Olive Oil before serving.
