Ingredients
- For Roasting the Wings
4 lb Chicken wings, wing and drummettes, wing tips removed
5 tsp Baking powder
2 tsp Salt
- For the Sauce
4 Tbsp butter, melted
1/2 cup Frank’s Hot Sauce
1 Tbsp Dark brown sugar
- For Serving
1/2 cup Prepared Blue Cheese Dressing
Celery sticks, for serving
Instructions
- Salt the wings lightly and on a sheet pan with a rack and let them dry uncovered in the fridge overnight.
- When you’re ready to roast the wings, heat the oven to 250°F. Set up two rack-lined sheet pans. Line the sheet pans with foil – helps with easy cleaning. Place the racks on the sheet pans and spray the racks with nonstick spray.
- Place the wings in a large bowl. In a separate bowl, whisk together the Buffalo Chicken Wing Blend, baking powder and salt. Season the wings with the spice mixture, using your hands to make sure the wings are evenly coated. Divide the seasoned wings between the two prepared sheet pans.
- Bake the wings at 250°F in the center of the oven for 30 minutes. Increase the oven temp to 425°F and move the pans up to a higher position in the oven. Roast for an additional 15 minutes, then rotate the pans and roast for an additional 10-15 minutes or until the wings are browned and crispy.
- While the wings are roasting, make the sauce. In a large bowl – large enough to hold the wings – combine the melted butter, hot sauce, brown sugar and Buffalo Chicken Wing Blend.
- When the wings are roasted, move them to the bowl with the sauce and using tongs or two large spoons toss the wings until coated. Alternatively, you could serve the sauce on the side. Serve immediately with blue cheese dressing and celery sticks.
