|1 lb peeled, deveined, tail-on shrimp
|1 cup cubed smoked sausage
|1/2 cup butter
|3 Tbl Worcestershire Sauce
|1/4 cup Roasted Garlic Extra Virgin Olive Oil
|2 Tbl BBQ Shrimp Seasoning
|1 cup Polenta
|1 cup water
|1 1/4 cups milk
|1 tsp salt
|1/2 cup grated cheddar cheese
|Preheat oven to 375°F. Place the butter, Worcestershire sauce and cubed sausage in an oblong baking dish. Bake for 7-10 mins or until the butter is melted and the sausage is sizzling.
|Remove from the oven and add the olive oil, BBQ shrimp seasoning and stir. Place the shrimp in the baking dish and stir to combine. Place back in the oven and bake for about 10 minutes or until the shrimp are opaque pink, firm to the touch and completely cooked through.
|While baking the shrimp, prepare the polenta. Bring the water, milk and 2 tsp salt to a simmer. Whisk in the polenta. Cook, stirring often, for 15-20 mins or until the polenta is creamy. Stir in the cheese. Taste and adjust the salt.
|Serve the shrimp and sauce in bowls with the polenta. Serve with warm french bread.
