When writing the intro for this recipe, we considered: “Bacon. Brown Sugar. Cinnamon. That is all.” That’s because this dish doesn’t need much more of a description. Brown sugar caramelizes on the smoky bacon, and we spice it just right with strong, aromatic Vietnamese Cinnamon. We love adding this to a brunch buffet. Amazing alongside a Bloody Mary. Or simply load up a buttered biscuit. Bacon!

  • Preheat oven to 350°F.
  • Combine the brown sugar, Cayenne and Vietnamese Cinnamon in a shallow dish.
  • Lay the bacon slices, one by one, in the brown sugar mixture. Move the slices, sugar side up, onto a baking rack placed over a sheet pan. As you move the bacon slices, some of the sugar will fall off. Press any lost sugar mixture back onto the bacon.
  • Bake until the bacon is crisp and candied – about 15-20 mins.
