Ingredients

3 cups raw, unsalted mixed nuts
1 Tbl Arbequina Extra Virgin Olive Oil
1 tsp Fleur de Sel
3 tsp Garam Masala
Honey optional

Often called Indian Five Spice, we blend Garam Masala in house, and lots of customers return for refills on this blend. This blend varies from region to region and depends on the hand of the blender. Some are heavier on the cinnamon and clove. Others boast cardamom. Garam Masala is found in lots of Indian recipes including Curres. Here we use it to spice mixed nuts, thanks to a customer tip. You’ll want to make a double (or triple) batch. They’re that good!

Instructions

1.Preheat oven to 300°F.
2.In a bowl, combine all ingredients until well blended. Pour mixture onto a rimmed baking sheet. Bake for 30 minutes. The lower oven temp will cook the meat at the interior of the nuts before browning the outside. They should be golden brown just at the end of the cooking time. Cool and serve.
3.An option is to add 1 Tbl of honey to the mixture for a sweet version. Be sure to stir the nuts a few times during the baking process to prevent scorching.
