This colorful dish is a take on Persian Jeweled Rice features fragrant basmati rice, dried fruit, nuts and loads of flavor. This Instant Pot version builds lots of flavor by sauteeing the raw rice in Harissa Paste along with lots of aromatics. A quick pressure cook results in a side dish that’s as beautiful as it is delicious!

2 cups basmati rice
1 Tbl Harissa Paste
2 tsp salt
3 garlic cloves, minced
1/2 red onion, thinly sliced
1 cup finely diced carrot
2 1/4 cups water
1/2 cup slivered almonds
1/4 cup golden raisins
1/4 cup craisins
Pomegranate ariels, for serving
Sliced scallion, for serving

Instructions
- Place the rice in a sieve and rinse until the water runs clear. Set aside.
- Set the Instant Pot to Saute on High. Drizzle in Olive Oil to coat the bottom of the pot. Add the rinsed rice, onion, garlic, carrot, Harissa Paste and salt to the instant pot and saute until the rice is warmed through, the onion softens a bit and the mixture is very fragrant. Add in the water and cinnamon stick and bring to a boil.
- Press cancel. Secure the lid and set the Instant Pot to manual pressure on High for 12 minutes. Allow the pressure to fully naturally release.
- Remove the lid and remove the cinnamon stick. Add the raisins, craisins and almonds. Gently incorporate using a fork to fluff the rice.
- Serve with pomegranate seeds and sliced scallion.
