Vanilla lemon posset is a simple and elegant British dessert. Heavy cream, sugar, fresh lemon juice and Vanilla Bean Paste or Puree are all you need to create this luxuriously smooth, silky custard. The vibrant citrus tang beautifully stands out in the rich, vanilla-flecked cream. It’s a refreshing, effortless delight.

  • Combine cream and granulated sugar in a saucepan. Bring to a gentle boil over medium-low heat. Simmer for 6 minutes, stirring constantly. The sugar should be completely dissolved. If not, continue simmering until smooth.
  • Remove from heat and stir in the lemon juice and vanilla puree or paste.
  • Allow to sit for 20 minutes, then strain into a measuring cup with a spout. Pour into ramekins and refrigerate until set. At least two hours, or, ideally, overnight. Serve with fresh berries and a dusting of Vanilla Bean Powder.
