minutesThis fresh spinach salad with apples and blue cheese is a delightful combination of sweet, savory and tangy flavors. We love the earthy base of spinach and the sweet-tart crunch of apples. We dress this one with a fruity vinaigrette made with Cranberry Dark Balsamic Vinegar. This salad is satisfying and flavorful – perfect as a side dish or the main event!
Ingredients
- For the Vinaigrette:
1/2 shallot, minced
2 Tbsp Dijon mustard
1/4 cup Cranberry Balsamic Vinegar
1 tsp salt
1/2 tsp ground black pepper
- For the Salad:
1 Gala or Honeycrisp apple, sliced thin
8 cups baby spinach
1/2 cup crumbled blue cheese
1/4 cup slivered red onion
Instructions
- Place the vinaigrette ingredients in a blender and blitz until smooth. Taste and adjust with salt.
- Assemble the salad by placing the spinach and red onion in a bowl. Drizzle on a vinaigrette and toss to coat the leaves. Taste and adjust with salt and pepper. Top with the sliced apples and crumbled blue cheese and serve.
