Need dinner in under an hour? Here’s your answer. Roasted pork tenderloin is ready in about 45 minutes. We create a paste with our Sweet Pecan Rub and garlic and stuff the tenderloin with this flavorful mixture. The sugars in the Sweet Pecan Rub caramelize on the outside and make a delicious crust. This is a great weeknight dinner and makes delicious sandwiches.
1 package pork tenderloin (there will be two tenderloins in the package) | |
4 cloves garlic, minced | |
Roasted Garlic Avocado Oil | |
3 Tbl Sweet Pecan Rub | |
1 tsp salt |
1. | Preheat the oven to 375°F. |
2. | Pat the tenderloins dry. Pierce the tenderloin at intervals. Using a mortar and pestle or the back of a chef's knife, create a paste with the minced garlic and 1 Tbl Sweet Pecan Rub. Stuff the tenderloins with this mixture. |
3. | Rub the tenderloins with Roasted Garlic Avocado Oil and rub with the Sweet Pecan Rub. Place in a baking dish and drizzle a little additional avocado oil. Bake until the tenderloin registers 140°F - 35-45 minutes. |
4. | Allow to rest for 5 minutes. Slice and serve. |
