The Lemon Basil Extra Virgin Olive Oil soaks into the hot orzo alongside the zip and zing of fresh lemon and the salty bite of feta. Ingredients
8 oz orzo
zest & juice of two lemons
1/2 tsp salt
1/2 tsp ground black pepper
1/2 cup pine nuts, toasted
1/2 cup crumbled feta
1 bunch scallions, white & green parts, sliced
Instructions
- Whisk together the Lemon Basil Extra Virgin Olive Oil, lemon juice, lemon zest, salt and black pepper. Set aside.
- Cook the orzo according to package directions in heavily salted water – the water should taste like the ocean. Drain the orzo and move to a serving bowl. Immediately add the oil mixture to the hot orzo. Allow to sit until the orzo cools.
- Once cooled, add in the toasted pine nuts, sliced scallion and feta cheese. Fold to combine and serve. Can be served room temp or chilled.
