This dessert from columnist and food wizard J. Kenji Lopez Alt is a tart-creamy-sweet-salty summertime dream. Salty, buttery Ritz crackers make for the foundation of the dessert. The lime helps offset the rich-sweet condensed milk and heavy cream. Our only add-in is Heilala Pure Vanilla Paste and Pure Lime Extract to enhance the buttery flavors and tangy lime. The hardest part of this dessert is waiting!

  • Whisk together the condensed milk, heavy cream and extracts in a large bowl until combined. Add the lime zest and juice and whisk. The mixture will begin to pull together and thicken. Be sure to whisk for a full two minutes.
  • Use a deep-dish pie pan or an oval casserole dish. Spread 1 cup of the condensed milk mixture on the bottom of the dish. Top with a single layer of Ritz crackers. Repeat, alternating layers of filling and crackers, ending with a layer of filling.
  • Cover and refrigerate for at least 4 hours or overnight—the longer you wait, the softer the crackers. Garnish with lime zest and serve cold.
