Middle eastern, sumac-rich Zahtar is a crunchy, herby all-purpose spice blend. We use it as a topping, bread dipping blend and seasoning for chicken, fish and vegetables. It’s also excellent in a vinaigrette. Drizzle this dressing on tomato-cucumber salads, shrimp skewers or to marinate feta. A rich and different departure from everyday vinaigrettes.
1/2 shallot, minced | |
1/2 tsp ground mustard | |
1 tsp honey | |
1 tsp Zahtar Blend | |
1/3 cup Champagne Pear Balsamic | |
Juice of 1/2 lemon | |
1/2 cup Arbequina Extra Virgin Olive Oil | |
Salt to taste |
1. | In a bowl or jar, combine the shallot, mustard, honey, Zahtar Blend, Balsamic Vinegar and lemon. Whisk or shake until well combined. Gradually drizzle in the olive oil, whisking constantly, until incorporated. |
2. | Allow the vinaigrette to sit for 5 minutes before tasting. Taste and adjust with salt or more Zahtar blend. |
