2 sticks unsalted butter, room temp | |
1/4 cup granulated sugar | |
2 cups dark brown sugar | |
2 eggs | |
1 Tbl Cookie Vanilla | |
3 1/2 cups Cup4Cup gluten free flour | |
1/2 tsp baking soda | |
1 tsp Baker's Salt | |
2 1/2 cups dark chocolate chips |
1. | Preheat oven to 350°F. Line two sheet pans with parchment paper. In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and both sugars until fluffy. Add in eggs and vanilla. Mix on medium speed until fully incorporated. |
2. | Add in the Cup4Cup Flour, baking soda and mix on low speed until just combined. Add in chocolate chips and run the mixer on low a few rotations to combine. |
3. | Drop rounded tablespoons of cookie dough onto parchment lined baking sheets. Bake for 10-12 mins or until light golden brown on the edges and bottoms. |
4. | Cool for 5 minutes on the pan before moving to a rack to cool completely. Can be stored in an airtight container for up to a week. |
