Ingredients

1 lb smoked sausage, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1/2 large yellow or red onion, sliced
Italian Herbs Extra Virgin Olive Oil
1 Tbl Italian Blend
1/2 tsp salt
1/2 tsp salt Crushed Red Pepper

This quick and easy sheet pan supper is all about versatility. Serve this one over polenta or pasta. Stuff into hoagies. Top with sunny side up eggs. Just a handful of ingredients leads to so many possibilities. We use Italian Herbs Extra Virgin Olive Oil and our classic Italian Blend to bring big flavor to the onions and peppers. Alongside the smoky sausage, this sheet pan is sure to please.

Instructions

1.Preheat oven to 400°F. Line a sheet pan with parchment paper.
2.Place the sliced sausage, peppers, and onion on the pan. Drizzle with olive oil and season with Italian Blend, Crushed Red Pepper and salt. Toss to coat. Spread the ingredients to the edges of the sheet pan in an even layer.
3.Bake for 20 mins, stirring halfway, or until the peppers are browned around the edges and the peppers and onions are softened and browned.
4.Serve over pasta or polenta. Fantastic as a hoagie or po boy. We love this with hashbrowns and fried eggs.
