For the Rimming the Glasses:
1/2 lime
3 Tbl Vanilla Sugar
For the Bellini:
3 cups frozen seedless watermelon
1 cup sparkling wine, chilled
2 tablespoons granulated sugar
Juice of 1/2 lime
1/8 tsp Vanilla Bean Salt

Frozen watermelon and chilled sparkling wine join the party in the blender to make this refreshingly cool drink. A quick blitz of wine and watermelon. A spritz of citrus. And a dredge in our Vanilla Bean Sugar. That sounds like a party, to us! This recipe makes a big-batch. Invite the neighbors!

1.Place the Vanilla Sugar in a shallow dish. Rub the lime on the rims of eight collins glasses or champagne flutes. Drege the glass rims in the Vanilla Sugar.
2.In a blender, place the frozen watermelon, sparkling wine, granulated sugar, lime juice and salt. Process until smooth. Pour into prepared glasses. Top off with additional sparkling wine and garnish with watermelon and lime wedges.
3.There you have it! Makes eight 6 oz drinks.
