Ingredients

2 sticks cold, unsalted butter cut into cubes
½ cup sugar
¼ cup powdered sugar
½ tsp sea salt
3 egg yolks
2 cups all-purpose flour
1 Tbl Pure Vanilla Puree
Sweet & Salty Popcorn Blend

Best part of this absolutely perfect cookie? It’s a great blank canvas. Roll in any sugar! Coffee lovers should try our Vanilla Latte Sugar or Espresso Sugar. These are divine rolled in Lemon or Ginger Sugar. For a seasonal flair, try Pumpkin Spice Sugar. In this recipe, we rolled them in our Sweet N Salty Popcorn Blend and we are obsessed with the tasty sweetness from honey granules and the nice salty crunch!

Instructions

1.Preheat oven to 350°F.
2.In a food processor, process the butter, sugars and salt until well combined and fluffy.
3.Add the egg yolk and pulse to combine. Add in the flour, Vanilla Puree and salt. Process until well combined and a dough forms. Form into a log. At this point, you can refrigerate, freeze or proceed with baking.
4.Sprinkle the Sweet n Salty Popcorn Blend onto a surface, and roll the log into the blend to coat the edges. Cut into 1/4 inch thickness and bake until golden brown around the edges, about 12 minutes.
