GRILLED CHEESE WITH SPICY MAYO

Who said it’s not easy being cheesy? Not us! This spicy grilled cheese is just about the easiest ever. We have been enamored with mayo as a grilled cheese’s crispy golden brown delicious delivery method ever since we popped our Slab Grilled Cheese into the oven. We added our Fiesta Blend to the equation for a spicy version. This sandwich. So cheesy!

Ingredients

  • 4 slices soft sandwich bread

  • Softened butter

  • 3 Tbl Kewpie Mayo

  • 1.5 tsp Fiesta Blend

  • Grated cheddar cheese

  • 2 Tbl unsalted butter, softened

Instructions

  • In a bowl, combine the Fiesta blend with the mayo. Set aside.
  • Heat a cast-iron skillet over medium heat.
  • Spread one side of each bread slice with butter. Spread the other side with mayo. The buttered side will be facing up. Place each slice, mayo side down, into the pan. Divide the cheese evenly on each slice. Adjust the heat so the bread sizzles gently.
  • Top with the other slice of bread, mayo side up. Grill the sandwiches until golden brown. Flip and cook until the second side is browned and the cheese is melty.
