Quick Pickled Cherry Tomatoes

These quick pickles are perfect for adding to tacos, topping nachos are simply right-out-of-the-jar snacking. They’re great for an impromptu charcuterie board. Pickling Spice does all the heavy lifting making for a complex accoutrement with endless possibilities.

Ingredients

  • 1/2 Apple Cider Vinegar

  • 1/2 cup water

  • 1 Tbl Pickling Spice

  • 2 tsp salt

  • 2 Tbl sugar

  • 1 cup cherry tomatoes, halved

Instructions

  • Bring the apple cider vinegar and water to a simmer. Add in the pickling blend, salt and sugar. Stir to dissolve.
  • Remove from heat and pour over the cherry tomatoes in a bowl or jar with a lid. Allow to sit for 30 mins to cool a bit.
  • These are excellent in just 30 minutes, and they just get better and better as they sit in the fridge. Store in the fridge for up to 2 weeks.
