Easy Pickled Red Cabbage

Ingredients
1/2 cup Apple Cider Vinegar
1/2 cup water
1 Tbl Pickling Spice
2 tsp salt
2 Tbl sugar
1/2 small head red cabbage, thinly sliced
Instructions
- Bring the vinegar and water to a simmer. Add in the pickling blend, salt and sugar. Stir to dissolve.
- Remove from heat and pour over the cabbage in a bowl or ready-to-store jar. Allow to sit for 30 mins to cool a bit.
- This cabbage is excellent after just 30 mins, and it gets better and better as it sits in the fridge. Store in the fridge for 2 weeks.
