These butter swim biscuits are the perfect addition to your holiday breakfast or brunch, but here’s the thing, we tested them, and they’re perfect for any morning! Buttery, tender biscuits bake up beautifully, no rolling, no cutting. The dough spreads into a 8X8 pan and couldn’t be easier to bake. We sprinkle the dough with a little Fleur de Sel on top for the perfect pop of saltiness with every bite. Serve them with Grinning Juipter Jammery jams and jellies or a drizzle of Local Honey. These will instantly become a holiday tradition!

Ingredients

  • 2 sticks butter, one frozen, the other on the counter

  • 2.5 cups soft wheat flour (we used White Lily)

  • 2 Tbsp sugar

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp Baker’s Salt

  • 1 3/4 cups buttermilk

  • Fleur de Sel, for sprinkling before baking

  • Grinning Jupiter Jam, for serving

  • Local Honey, for serving

Instructions

  • Adjust oven rack to middle position and preheat the oven to 450°F.
  • Using the large holes of a box grater, grate the stick frozen butter. In a medium bowl, toss together grated butter, flour, sugar, baking powder, baking soda, and salt until butter is thoroughly coated in flour mixture. Chill, uncovered, in the freezer for 10 minutes.
  • Add the other stick of butter to an 8-inch square aluminum baking pan. Place in preheated oven until melted, about 4 minutes.
  • While the butter melt, stir buttermilk into the flour mixture until just combined – a rubber spatula worked well for us. The dough will be very sticky.

  • Carefully remove pan from oven. Scrape dough into the hot pan with melted butter. Spread dough to the edges. Use a butter knife to cut the dough all the way through into 9 equal squares. Sprinkle Fleur de Sel on top.
  • Bake until golden brown and a toothpick or skewer inserted in the center comes out clean, 22 to 24 minutes. Let the biscuits cool slightly in the baking pan before serving, about 5 minutes. Serve with Grinning Jupiter jam and Local Honey!
