minutesThis delicious, indulgent cheesecake is a cinch – with no oven time! The sweet and smooth cream cheese filling is bursting with vanilla flecks from Vanilla Bean Puree. We top this lovely pie with our Quick Strawberry Sauce for a luscious topping that deserves a spot in your fridge all strawberry season long!
Ingredients
2 cups Heavy Cream
2 8-oz packages of cream cheese
1⁄3 cup granulated sugar
2 Tbsp powdered sugar
1⁄4 cup sour cream
2 Tbsp Pure Vanilla Bean Puree
Graham Cracker Crust
Quick Strawberry Sauce, for topping
Instructions
- Using a stand or hand mixer with the whisk attachment, beat the heavy cream to stiff peaks – about 4-5 minutes. Move to a bowl and set aside.
- Switch to the paddle attachment and beat the cream cheese, granulated sugar and powdered sugar until light, fluffy and very smooth – about 6 minutes, stopping occasionally to scrape down the sides of the bowl. Be sure the mixture is very smooth with no lumps.
- Beat in the sour cream and Vanilla Bean Puree.
- With the mixer on low, add in the whipped cream. Combine slow so as not to deflate the whipped cream.
- Scrape the filling into the graham cracker crust and refrigerate for at least 4 hours or, ideally, overnight. Serve with Quick Strawberry Sauce.
