A fool is a classic, light and creamy British dessert that includes berries or stone fruit folded into sweetened whipped cream. This strawberry fool is simple to make and is a must during the peak of strawberry season. Or not. Because the strawberries are cooked into a compote, frozen strawberries are the perfect stand in for fresh. We coax out big, beautiful strawberry flavor by adding in Raspberry Extract – one of our favorite pastry chef tricks. This velvety, fruity treat is perfectly elegant and a must for your next dinner party.
1 lb fresh or frozen strawberries, tops removed and quartered | |
1/4 cup granulated sugar | |
1 tsp Raspberry Extract | |
1 cup heavy cream | |
1/4 cup Vanilla Powder | |
1 tsp Pure Vanilla Puree |
1. | First make the compote by combining the strawberries, sugar and a splash of water in a saucepan. Heat over medium, stirring often, until the strawberries soften and give up their juices - about 10 mins. The mixture should be thick and coat the back of a spoon. Stir in the extract and bubble for about 1 minute. Remove from heat and cool. Then chill until very cold. |
2. | Using a stand mixer with the whisk attachment, whip the heavy cream, Vanilla Powder and Pure Vanilla Puree until the cream holds soft peaks. |
3. | To create the fools, layer cream and compote in dessert dishes. You can stir to combine or leave the layers separate. Either way, it's a beautiful and delicious dessert! |
