This Ina Garten classic is a great way to get more fish into your dinner rotation. We added our Garlic & Herb Seasoning to the buttery Ritz cracker crumbs and baked the fish with our Lemon Garlic Extra Virgin Olive Oil. This quick dish is full of flavor and ticks all the convenience boxes. Super delish!

Lemon Garlic Extra Virgin Olive Oil | |
Salt & Pepper | |
15 Ritz Crackers, crushed | |
1/3 cup panko | |
1 Tbl Garlic & Herb Blend | |
2 Tbl minced parsley | |
2 cloves garlic, minced | |
1 tsp lemon zest | |
3 Tbl unsalted butter, melted | |
1/4 cup white wine | |
Juice of 1/2 lemon | |
Lemon slices for serving |
1. | Preheat the oven to 400°F. Drizzle about 2 Tbl olive oil in a 9 x 9-inch ceramic baking dish - or a dish just big enough to hold the fish. Tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Season with salt and pepper and bake 10 minutes. |
2. | Meanwhile, combine the cracker crumbs, Garlic & Herb Blend, panko, parsley, garlic, lemon zest and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside. |
3. | Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. Don’t worry if some crumbs get into the sauce! |
4. | Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center. Sprinkle with salt and serve hot with the pan juices and lemon wedges. |
