Our Coffee BBQ Rub is easily the best seller in the shop. The coffee and chiles play perfectly alongside the crunchy brown sugar. It’s a favorite for steaks. We love it for tri-tip. A must for backyard burgers. We took this favorite for a spin on spuds, and the result? Perfection.
2 large sweet potatoes | |
Kosher Flake Salt | |
1/4 cup Coffee BBQ Rub | |
Caramelized Onion Avocado Oil | |
Jay D's Louisiana BBQ Sauce for serving |
1. | Preheat oven to 375°F. Use the convection setting if it's available. |
2. | Scrub the sweet potatoes. Peeling is optional - we left the peeling on. Cut into 1/4 inch planks. Then cut the planks into fries. |
3. | Place the fries and a large bowl. Season with salt and toss to distribute. Drizzle with Caramelized Onion Avocado Oil and toss to distribute. Add in the Coffee BBQ Rub and toss to distribute. Doing each step separately helps to evenly distribute the seasonings. |
4. | Spread in an even layer on a parchment or foil-lined sheet pan. Roast for 15 mins and remove from oven and redistribute. Roast for about another 10 mins or until the potatoes are tender and the edges are crispy. |
5. | Serve with Jay D's BBQ Sauce for dipping. |
