1. | A note about the wings. We separate the wing and drummette and remove the wing tip. Be sure to freeze the wing tips along with onion and celery trimmings. It makes a great stock! |
2. | To build the board, serve with extra Hot Honey, lots of crunchy fresh and pickled vegetables. |
3. | If grilling, heat a grill to medium-high heat of about 400°F. Grill the wings until grill marks are seen, turning to mark on both sides. Reduce the heat to low to avoid flare ups. Grill the wings until completely cooked through and the juices run clear when pierced--about 20-25 minutes. |
4. | The wings can also be oven roasted. Preheat oven to 400°F. Roast the wings for 10 minutes then turn and roast an additional 15-20 minutes until the wings are completely cooked through, golden brown and the juices run clear when pierced. |
