1.Season both sides of the salmon with salt and Garlic Maple Rub. Allow to sit at room temp for 15 minues. Heat a cast-iron skillet over medium-high heat. Drizzle in the Meyer Lemon Extra Virgin Olive Oil.
2.Sear the salmon on one side for 5-7 minutes or until deep golden brown. Drizzle in a little extra oil onto the filet, then flip. Turn down the heat. Brush the seared side of the salmon with Honey Ginger Balsamic Vinegar during the final minutes of cooking.
3.Cook for an additional 3 minutes for medium rare.
4.During the last few minutes of cooking, add in a fresh spinach. Drizzle with Lemon Garlic Extra Virgin Olive Oil and season with salt and pepper. Cook until wilted and serve with the salmon.
