Slow Cooker Corned Beef & Vegetables

servingsCorned beef has been brined in a curing salt solution – the “corning” process yields a tender and distinctively salty flavor. After rinsing, add the corned beef to your slow cooker along with Pickling Spice. With this extra step, the corned beef will be fall-apart ready for serving with vegetables or on Reuben sandwiches.
Ingredients
3-5 lb Corned beef
2 Tbsp Pickling Spice
4 cups Beef Broth
1 lb Small red potatoes, halved
4 Carrots, peeled an cut into 2-inch chunks
1/2 head Cabbage, cut into wedges
Instructions
- Rinse the corned beef and pat dry. Place in the slow cooker and add the Pickling Spice and beef broth.
- Cook on low for 4 hours. Add in the potatoes and carrots. Cook for an additional 2 hours or until the potatoes and carrots are tender. Add in the cabbage and cook for 30 minutes.
- Serve the corned beef with the vegetables or slice and serve on Reuben sandwiches.
