smoked tomato tuscan white bean toast


6 baguette slices
8 garlic cloves
Arbequina Extra Virgin Olive Oil
1 pint cherry or grape tomatoes
1/2 cup Smoked Extra Virgin Olive Oil
2 tsp Smoked Tomato Blend
1 can cannellini beans, drained and rinsed
Cyprus Flake Salt for serving

It doesn’t get much more straight forward and uncomplicated than this recipe. While the process may seem simple, the flavor is anything but. Our Smoked Tomato Blend takes cherry tomatoes and transforms them into a rich, syrupy topping. They’re perfect atop the meaty beans and garlicky, crunchy baguette slices. Sublime.


1.Preheat oven to 375°F. Use two of the garlic cloves to on the baguette slices. Place on a sheet pan and drizzle with Arbequina Extra Virgin Olive Oil. Toast the baguette for five minutes. Flip and toast for another five minutes. The baguette should be crispy but still chewy in the center. Set aside.
2.Slice the remaining 6 garlic cloves. Slice the cherry tomatoes in half.
3.In a skillet over medium heat, add in Smoked Extra Virgin Olive Oil and sliced garlic. Cook gently until the garlic lightly browns – just a shade. Add in the tomatoes and Smoked Tomato Blend. Cook until the cherry tomatoes give up their juices and the mixture begins to thicken – about 10 minutes. Taste and adjust with salt.
4.For each toast, spoon beans onto the baguette slice. Mash lightly. Spoon on a dollop of tomatoes. Sprinkle each toast with Cyprus Flake Salt just before serving.
