1. | Season both sides of the salmon with salt and Garlic Maple Rub. Allow to sit at room temp for 15 minues. Heat a cast-iron skillet over medium-high heat. Drizzle in the Meyer Lemon Extra Virgin Olive Oil. |
2. | Sear the salmon on one side for 5-7 minutes or until deep golden brown. Drizzle in a little extra oil onto the filet, then flip. Turn down the heat. Brush the seared side of the salmon with Honey Ginger Balsamic Vinegar during the final minutes of cooking. |
3. | Cook for an additional 3 minutes for medium rare. |
4. | During the last few minutes of cooking, add in a fresh spinach. Drizzle with Lemon Garlic Extra Virgin Olive Oil and season with salt and pepper. Cook until wilted and serve with the salmon. |
